Carrot Koora or Carrot Curry

Carrot and Tomato Koora or Curry

Carrot and Tomato Koora or Carrot and Tomato Curry

Well, this dish is midway between a salad and a koora/curry. I like it for its simplicity and the fact that it is so very easy to make. For me easy-to-make is a must on weekdays, as I often have to cook and run to work! I have this carrot curry tastes with rotis or just by itself as a salad.

  1. Carrots – 250 Gms
  2. Tomato – 1 Large
  3. Green Chillies – 2 or 3
  4. Sugar – 1/2 tsp
  5. Mustard Seeds – 1 tsp
  6. Udad Dal – 1 tsp
  7. Oil – 2 tsp
  8. Curry Leaves – A Few
  9. Salt to Taste

  1. Grate the carrots.
  2. Chop the tomato into fine pieces.
  3. In a wok/kadai, heat the oil.
  4. Add mustard seeds and wait till they splutter.
  5. Add the udad dal and fry till golden brown.
  6. Add the slit green chillies, curry leaves and tomato.
  7. Over medium heat, fry till the tomato pieces are soft.
  8. Add the sugar and mix well.
  9. Add grated carrot.
  10. Over medium heat, cook for about 5-7 minutes while mixing regularly.
  11. Add salt and mix well.
  12. Serve warm with rotis or by itself!
